Salad Dressings

Serves 1-2

Zesty Lemon Pepper and Olive Oil - Mix 2tbsp Olive oil with juice of one lemon and ground pepper to taste (optional to add lemon zest to increase flavour and turn into SuperLemon. :)

Orange Blossom Balsamic Vinaigrette - Mix 2 tbsp Olive Oil, 1 tbsp Balsamic vinegar, juice of half an orange (optional to add orange zest to increase flavour)

Not Drunk Red Wine Vinaigrette - 2 tbsp Red wine vinegar, 2 Tsp Dijon mustard, 1/2 tsp Rock or Himalayan salt and pepper to taste.

Zesty Lime and Pepper - 2tbsp Olive oil, juice of two limes add zest to zesty zesty

Hot Chilli Lime - Zest and juice of two limes, 1 tspb red wine vinegar, 1 tbsp soy sauce, 1 tbsp honey, i chopped chilli or 1 tbsp chilli flakes, pinch of salt.

Tahini Ginger Dressing  -  1/4 cup tahini, Juice of 1 lime, Half a thumb of ginger, peeled and chopped, 2 tbsp rice malt syrup (or maple), 1tbsp rice vinegar, 1 tsp cayenne pepper.

 

* zest is grating the skin of the lemon or lime*

Quadruple recipes for around 1 cup of dressing. Store in airtight container in fridge.

 


Stir Fry Sauces and Marinades

For marinades, coat meat or fish and place in fridge for minimum 2 hours. For stiry fry, stir into veggies whilst cooking.

Honey Soy and Chilli - 1/4 cup olive oil, 1/4 cup soy, 1/4 honey, 1 large red chilli. To reduce hotness remove seeds. (seeds are the hot parts of chilli not skin) 

Lemony Herb - 1/4 cup olive oil, 2 tbsp Dijon mustard, 1 tbsp lemon juice, 1/2 tbsp pureed garlic (or one clove minced), 1 tbsp fresh rosemary, 1/4 tsp ground coriander. Salt and pepper to taste.

Gourmet Healthy Booster - 1 bunch coriander (about 1 cup), 2 cloves garlic, minced, Juice of 2 lemons,  1/3 cup olive oil, 1 tsp ground cinnamon, 1 tsp cayenne pepper, 1 tsp ground cumin,  1/2 tsp cardamon, 1/2 tsp ground allspice, 1/4 tsp onion powder, 1/2 tsp finely diced red capsicum. Salt and pepper to taste.

* Stir Fries are fantastic with fresh herbs like basil, ginger, turmeric, coriander, Thai basil, kaffir lime leaves. You don't necessarily need sauce to flavour. Try these :)

 


Healthy Mayonnaise & Ranch Style Dipping Sauces

Honey I Mustard Mit I'm Delicious. - 2tbsp Olive oil, 2 tbsp Honey, 2 tbsp dijon mustard, 2 tbsp apple cider vinegar, 1 tsp salt, 1 tsp ground pepper.

Coconut Milk Ranch Dressing (amazing with prawns) - 1/2 cup whole egg or vegan mayo, 1/2 cup full fat coconut milk, 1 tbs fresh dill, 2 tbsp fresh chives 2 tbsp fresh parsley, 2 tbsp apple cider vinegar. 

Veganiaise  (made from tofu) - 100g silken tofu (organic), 1 cup olive oil, 3 tbsp lemon juice, 3 tbsp dijon mustard - 1 teaspoon salt. Blend tofu, mustard and lemon juice then and add oil slowly. Then add salt and pepper.

Vegan Aioli - Healthiest option 1 clove of garlic, 1/2 tsp salt, 1/4 cup water, 1 tbsp lemon juice, 2/3 cup unsalted raw cashews (100 g). SOAK cashew overnight, then blend all ingredients until creamy. * add little or more depending on how you like the consistency,

Honey Mustard 'Dairy Free' Aioli - 1 clove of garlic, 1/2 tsp salt, 1/4 cup water, 1 tbsp lemon juice, 2/3 cup unsalted raw cashews (100 g), 1 tbsp honey, 1 tbsp dijon mustard. SOAK cashew overnight, then blend all ingredients until creamy. * add little or more depending on how you like the consistency,

Chilli Lime Dipping Sauce - 1/4 cup olive oil, 2 tbsp honey, juice  and zest of two limes, 1 red chilli chopped finely.
