The World's Easiest Vegan Shepherds Pie

The VERY simple version of this classic is here! #Busyhomofave
Of course you can fancy this up as much as you like, but my job today is to give you a tasty meat free, SIMPLE AND QUICK recipe!
2 large sweet spud/or go traditional and use white
2 cups mixed peas, corn, carrots (or of course use frozen mix for QUICK)
1 1/2 cups cooked lentils (go organic canned if you want super super fast)
1 onion chopped
4 cloves garlic chopped - don't use paste! blergh!
4 cups of vegetable stock (if you make your own even better)
Method To My Madness:
1. Peel, chop and boil spuds - relax for ten mins or feed the cat.
2. Saute onion and garlic
3. Add stock
4. Add lentils - if in a can. If dried add these and bring to boil, then simmer until lentils are tender.
5. Add vegetables (peas, corn, carrot are faves, I add broccoli to everything )- if fresh, give them time to cook, if frozen let them warm up a bit, they're freezing.
Allow to simmer
add salt and pepper in a sprinkle motion like a chef
Taste and close your eyes as you do this
Hum "Mmmmmmm" - season more to taste :)
Continue to simmer.
Spuds are ready, mixture is thick.
Drain spuds, thick of your ex and start to mash and mash the spuds into smithereens- add vegan butter or cow butter if you ain't veganing tonight. *a little coconut cream works too
Pour your mixture into an oven dish, top with mashed spud and a little breadcrumbs to crust the top (almond meal would be a better option)
Place in oven until top is browned.
Bring it out, comment on how great it smells. Allow to cool slightly, the longer it sits, the thicker it gets. Kinda like people.
Serve with a side salad or just double up your plate ;)

Option 1: Add in 2 tbsp of mashed spud
Or take out two cups of mixture and thicken with 3tbsp cornstarch/arrowroot powder
Or add more lentils/beans.
