Spicy Vegan Dippers!!!

Vegan Dippers!

Shopping & Ingredients List:

125g Rolled Oats* (25g used)

½ Packet of Taco Seasoning (3g used)

240g Tofu

1 tbsp tomato sauce

Optional

Coconut oil on tray for cooking

To make own taco seasoning use chilli powder, onion powder, paprika, garlic powder in even proportions.

*use gluten free if required

*this recipe makes extra seasoned oats

Method

1. Preheat an oven to 200c (180 fan), 400f, gas mark 6. Grease & line a baking sheet.

2. In a food processor blend the rolled oats & the taco seasoning together. Set aside.

3. Cut the tofu into 6 fingers & coat in the seasoned oats. You will use about 25 grams of the coating. Place on the baking sheet & cook for 20 minutes turning once during the cooking time. Optional - lightly spray the vegan dippers with cooking spray for a crispier finish. Serve with ketchup for dipping.

4. Keep the remaining seasoned oats in an airtight container. They will keep for several months for future use

 

PS: My take on tofu is get the good organic stuff and no more than 3 servings per week.
