RAW CARROT CAKE!

I love Carrot cake. I especially love the zesty icing goodness. Omg. My mouth is watering already!

This one is RAW! It's sugar free and no animals were harmed in the making of this DELICIOUSNESS!

Ingredients

For the base

  • 1 cup shredded carrots*
  • 1 cup tightly packed pitted dates - you may add more for a sweeter cake.
  • ½ cup unsweetened coconut flakes
  • 1 cup walnuts
  • ¼ cup melted coconut oil
  • ¼ cup coconut flour
  • 1 tsp cinnamon - add more if you LOVE cinnamon! I do!
  • ¼ tsp nutmeg
  • ½ tsp ginger
  • Rasins - optional
  • 1tbsp Honey/Agave/Maple/Rice Malt Syrup

For the icing

  • ½ cup soaked cashews** 2-3 hours soaking/overnight for best creamiest result.
  • 1/4 cup unsweetened coconut milk
  • 1 tbsp maple/honey/rice malt syrup***
  • 2 tbsp melted coconut oil
  • Juice of half a lemon - You may add little more if you like Zesty!

METHOD

  1. Line a muffin pan with 6 cupcake liners and set aside. If you don't like muff, use a baking tray!
  2. Place all cake ingredients into a food processor and process into a finely crumbled/sticky mixture {be careful not to over-process into a paste though}. Divide this mixture between the 6 cupcake liners and use your fingers to press into a cupcake shape {I flattened the tops of mine by simply pressing them down evenly to create a smooth surface for the frosting, but you can always shape yours into little pyramids just for fun! If using a flat baking tray, line it out, press into tray and you can slice later
  3. . Place the tray in the freezer and allow to set for at least 3-4 hours or until firm. Grab Ice cream, sit back and relax whilst your healthy option freezes.
  4. Make sure all icing ingredients are at room temperature, place all frosting ingredients into a high power blender and zooommmm into a smooth consistency. Taste it as you may want more lemon. Add some of the lemon zest if you like! Go on, be a daredevil!
  5. Transfer to a piping bag and frost the cupcakes if you are Martha Stewart. If you are me, spoon it on top and be done with it.
  6.  Sprinkle with a hint cinnamon and enjoy!

This is bloody delicious and has no nasties at all.

Serve with a cup of tea, coffee or just scoff another piece!
