Raspberry and Oat Cookies!
So, I know it's pretty obvious I like to cook, but I actually really like to cook when it's easy, quick, healthy and makes my gut happy. I do not spend hours in the kitchen. Ever.
Michelle has fallen in love with these cookies and they would have to be one of her faves, although that dairy free chocolate mousse usually wins her over too :)). These cookies are refined sugar free, dairy free and well pretty much just crap free, so they are good to keep around :)
In fact I'm pretty sure they are better than a Girl Guide.
These took me about 5 mins to prep and then 12 mins to bake! Awesome go to snack and for kids lunch boxes! Amazing!!!!
Or that office "Bring a plate".. so much cool that a pack of biscuits.
Healthy doesn't have to be boring or time consuming!
Raspberry, Oat and Coconut Cookies
1 cup oats
1 cup coconut
1 cup almond flour
1/2 tsp Cinnamon
1/4 maple syrup/honey/sweetener
Mix together - oats, almond flour, banana, coconut, cinnamon and syrup
Scrunch into cookies
Press a raspberry on the top!
Bake on 180 for 12 mins
Allow to cool or burn ya fingertips.
Keep an eye on the cookies, you want a nice golden tinge but not too dark :)
