The Big Bang Salad and Salmon


I know your mouth is watering as you peruse my photographs.... I understand. So I figured I better not keep all my best kept secrets just for my VIP online clients and I better dish out one of my faves for you!

This salad look complicated because it looks like it has so many ingredients, but honestly, it really doesn't. Plus, any leftovers you can eat as snacks or make round two of this delicious salad!

It will impress your friends, that's for sure!

The Big Bang Salad!


1/2 bunch coriander, chopped

1/2 bunch parsley, chopped

1/2 red onion, finely diced

1 cup freekah (or cracked wheat or quinoa) you could even use brown rice!

1/2 cup/tin Lentils

2 tbsp toasted pumpkin seeds

2 tbsp toasted slivered almonds

2 tbsp toasted pine nuts

2 tbsp baby capers

1/2 cup rasins/currents/cranberries

Juice of 1 lemon - or pinch yourself!

3 tbsp extra virgin olive

Sea salt to taste

1 pomegranate, deseeded, to serve. Passionfruit would also work in summer months!

*Fetta - optional

Combine all together  and mix gently 

*Toast pumpkin seeds, almonds and pine nuts in a non stick pan or in oven,


Dressing * optional

1 cup thick Greek yoghurt

1 tsp cumin seeds, toasted and ground

1 tbsp honey

Combine and mix well




3 Cloves of garlic

4tbs Soy Sauce

1 tbsp Honey

Combine well and top salmon - refrigerate for 30mins.

Have a glass of wine whilst you wait ;)

Bake for 25mins on 180 Celsius  

 Sit back, look at meal and think "DAYYYYAAAMMMM I did that! "
